About the Recipe
This was born out of leftover fig preserves and a jar of sumac I forgot I had. I stirred them together on a warm evening with grilled halloumi and crusty bread nearby—and the result was sweet, citrusy, and just grounded enough to feel like you’re dining under a fig tree at dusk.

Ingredients
1 tsp fig jam or preserves
½ oz lemon juice
1 oz white port or sweet vermouth
Dash of ground sumac
Soda water
Ice
Instructions
Step 1
Stir fig jam with lemon juice and sumac until smooth.
Step 2
Add vermouth or port and stir again.
Step 3
Pour into glass over ice.
Step 4
Top with soda and garnish.
Tips
Use fresh figs if in season
Sumac adds tart depth—adjust to taste
