Ingredients
½ oz gin (or juniper tea for zero-proof)
2 oz soda water
½ oz olive brine
½ oz lemon juice
1 tsp honey or simple syrup

Instructions
Step 1
Shake gin, brine, lemon, and honey with ice.
Step 2
Strain into glass and top with soda.
Step 3
Garnish with a lemon twist and olive.
Tips
Zero-proof: Use chilled juniper berry tea or nonalcoholic gin
