Honey Chamomile Highball

Perfect for when you want to unplug, slow down, and melt into the moment

About the Recipe

Some nights call for soft lighting, a warm blanket, and something floral in hand. Honey Chamomile Highball is exactly that — mellow, soothing, and just the right touch of sweet. It’s the drink you make when your to-do list is done (or ignored), your phone’s on silent, and the only thing on your calendar is rest. I love sipping this slowly while flipping through a book or letting a mellow playlist fill the quiet.

Ingredients

  • 1½ oz whiskey or bourbon

  • 1 oz strong brewed chamomile tea (cooled)

  • ½ oz honey syrup (see below)

  • Sparkling water, to top

  • Ice

Instructions

Step 1

Brew chamomile tea and let it cool.

Step 2

In a glass filled with ice, combine whiskey, tea, and honey syrup.

Step 3

Top with sparkling water and give it a gentle stir.

Step 4

Sip slowly. Let your shoulders drop. Repeat as needed.

Tips

  • Warm it up: Use hot chamomile tea and skip the sparkling water — a cozy toddy twist.

  • Zero-proof: Try a mix of chamomile tea and apple juice in place of whiskey.

  • Flavor swap: Maple syrup adds a deeper, earthier sweetness.

  • Spice it up: A cinnamon stick or a slice of fresh ginger adds warmth

Serving Tips

Glass: Highball or ceramic mug

Garnish: Chamomile flower or thin lemon peel

Vibe: Dimmed lights, fuzzy socks, and your favorite mellow playlist
